As the world sleeps in dawn's silence, our Night Owl roast emerges. We carefully source the Mundo Novo variety from the CESMACH cooperative in the Sierra Madre de Chiapas and boldly roast it to a deep 460°F French Roast.

This exquisite roast unveils enchanting hazelnut and sorghum notes, culminating in a velvety finish that echoes the tranquility of predawn hours. More than just a brew, it's a tribute to moonlight enthusiasts and pre-dawn risers.

What's to Know About Dark Roasts?

Coffee beans transform during roasting; dark roasts reach higher temperatures, causing the oils within the beans to break the surface, giving them a shiny, oily appearance. These oils carry much of the bean's flavor, making dark roasts rich and bold in taste.

Dark roasted beans are best prepared with methods that fully extract their robust flavors, such as espresso or French press, which emphasize the coffee's full body and low acidity.

When brewing a dark roast, using slightly cooler water (around 195 to 205°F) can prevent over-extraction and highlight the chocolatey, smoky nuances inherent in these beans. The grind size should be tailored to the brewing method, with a coarser grind for French press and finer for espresso, ensuring the optimal balance between strength and flavor.
