The Story Behind Ember Coffee Company
We always want to be ahead of the curve and doing stuff that no one's done. We say we’re building our ship at sea. And that's what got us headed in the direction of air roasted, specialty grade coffee.
When you're air roasting, you're using hot air convection, it floats the beans on a bed of hot air. It's like every bean has been roasted individually. Air roasted coffee is super smooth with no harsh acidity. There's no soot. There's no burnt bitterness, you're not trying to hide the taste.
Air roasted coffee uses hot air to roast beans uniformly, eliminating the risk of scorching. This method produces a cleaner, brighter cup, highlighting the bean's true flavors and reducing bitterness. It's a refined experience compared to traditionally drum-roasted coffee.
Our sourcing policy is to strive to maintain as much traceability to the farmer as possible, and we try to support small farmers as much as we can.
We do have some Fair Trade coffees some times however our current selection does not include any Fair Trade or Organic beans. We've written about FT, organic and similar certifications on our blog Our Take on Fair Trade and while we try our best to get FT-certified coffees, we don't always think a certification is always possible for many of the smaller farmers we source from.
Our policy is to always work with importers that we know pay fair prices to the producers and farmers directly. We would love to source directly however we're currently not at a scale to be able to.
Absolutely! Ember Coffee's specialty K-cups are meticulously crafted to be compatible with both Keurig v1 and v2 models. As expert coffee roasters, we ensure every cup seamlessly blends with your machine, guaranteeing a perfect brew across all Keurig versions.
However, we have discovered that some Keurig users rely on the top cover/lever to push the pod down and puncture a hole in the bottom of the bottom. Our pods are made with a recyclable plastic that's a bit thicker, so you may need to push the pod down into place (thereby puncturing the bottom of the pod) before you close the lever. That's what we do at home and it works beautifully.
Note: In the last two years, we have only discovered one machine that does not work with our pods. This is the Ninja DualBrew Pro Specialty Coffee System.

Our K-cups have a thicker plastic lid with a thin sheet of plastic that gets punctured during the brewing cycle. We opted for this design rather than the foil top so that we could be 100% recyclable. Our concern was that most people, when faced with the inconvenience of separating pods, would opt to just throw the whole thing in the track. This overcomes that barrier to responsible waste disposal.

At Ember Coffee, we utilize a unique air-roasting technique for our coffee that also affects our K-cups. This method ensures each bean is roasted evenly, reducing bitterness and acidity. The result? A smoother, more balanced flavor in every cup, distinctly different from leading brands that don't use air roasting or specialty-grade coffee beans.
Alright, now for some practical tips on how to brew our pods. You see, the brewing game changes a bit with these. Typically, for filter coffee, we recommend a 1:17 coffee-to-water ratio. But with K-cups, it's a bit different because you can't adjust the coffee in your pod, and I don't know what size mug you're rocking.
Most store-bought pods have around 8-10 grams of coffee, but ours pack about 13 grams, which means you're looking at roughly 17-18 grams when it's all said and done. So, if you've been using the small cup and robust setting to extract maximum strength, you might want to dial it back a notch.
Here's the game plan:
Step 1: Select the right cup size and go for the normal strength setting.
Step 2: If it's too weak for your taste, crank up the strength.
Step 3: If it's too strong, either brew a larger cup with more water or use the weaker setting.
We experimented and found that tweaking the settings to a slightly lower temperature or a larger volume can unlock the full potential of our coffee. It's all about finding that sweet spot to savor the rich, balanced flavor we're known for. So, go ahead, give it a try!
