A flavored medium roast built on Brazilian beans from Minas Gerais. Air-roasted to a smooth profile, then layered with caramel, vanilla, and a touch of rum-inspired warmth. Dessert-like without being heavy, tropical without going over the top.

The base bean is hand-tended on small family plots in Brazil's highlands. We source our flavorings from a craft supplier who develops profiles to complement the bean, not bury it. No alcohol in the product. A fun one for mornings that don't need to be serious.

Start with a 1:16 ratio, 1 gram of coffee to 16 grams of water. That's the sweet spot for balanced flavor and body. Pour-over and drip stay close to 1:16. Go 1:15 for more richness, or 1:17 for a lighter cup.

French press does well a little stronger at 1:14 to 1:15. AeroPress can go tighter too, around 1:12 to 1:15. Use filtered water, grind fresh, and drink it right after brewing.

Air roasting uses clean, hot air to roast each bean evenly. You get a smoother, cleaner flavor without the bitterness or burnt taste that comes from traditional drum roasting. No hot metal contact means no smoky aftertaste.

It's a gentler process that brings out what's actually in the bean. The origin flavors and nuanced notes that heavy roasting covers up.

HERE'S THE DEEP DIVE ON

Jamaican Me Crazy

About the Producer

Producers at the foot of Serra Negra in Minas Gerais grow this coffee between 750 and 1100 meters. Harvest is May through August, with cherries spread on patios and turned by hand over twenty to twenty-five days of natural drying. The region's combination of warm days and cool highland nights slows cherry maturation and concentrates sugars. Red-clay laterite soil, threaded with mineral deposits, adds an earthy quality that anchors the cup's sweetness.

Many of these families have worked the same hillsides for generations, passing down knowledge of microclimates and drying conditions. The result is coffee that's low in acidity, full-bodied, with chocolate and nutty warmth. Not a competition lot, just honest, well-made Brazilian coffee. Soft, approachable, and consistent year after year.

ROAST

Roast Level

How long (and at what temperature) the beans stay in the roaster. This affects everything— how sweet, how bold, how bright your cup tastes. Here's the thing though: "light," "medium," and "dark" mean something different at every roastery. There's no universal standard. So when we say medium roast, we're speaking our own language. Think of our scale as a guide to our approach—smooth, balanced, never burnt.

Light & Bright Dark & Bittersweet
ACIDITY

Acidity

Not sour. Not harsh. Think brightness—like the difference between a ripe peach and a green one. Lower acidity means the coffee leans sweeter, softer. Higher acidity brings more vibrancy, more of that crisp, lively quality. Our air-roasted beans tend to land on the gentler side. That's intentional. We want your morning to feel like a deep breath, not a jolt.

Soft & Subtle Crisp & Bright
INTENSITY

Intensity

This is about how the coffee lands. The weight of it on your tongue. How concentrated the flavors feel. A lower intensity is lighter, more delicate—easy to drink without thinking. Higher intensity means bold, full, the kind of cup that announces itself. Neither is better. It's just about what you're craving and what your morning needs from you.

Mellow Bold

Good coffee starts with good farming. The Brazilian beans behind Jamaican Me Crazy are grown in the highlands of Minas Gerais, where volcanic soil and cool evening air produce a depth that only patience and place can deliver. We air-roast them to a smooth medium profile that lets the bean speak first. Then we layer in the fun: caramel sweetness, a ribbon of vanilla, and a warm hint of rum-inspired flavor that turns your morning mug into a vacation. Dessert-like without being heavy, tropical without being overdone. Our flavorings come from a craft supplier who takes their work as seriously as we take ours. The result is a flavored coffee with real substance underneath the smile. No passport required.

Frequently Asked Questions

It’s all in the roast. While most coffee is drum-roasted, which means the beans are scorched as they come in contact with the hot sides of the metal drum. In contrast, we use superheated air for heat transfer—a method used by less than 1% of roasters worldwide. It delivers smoother, more balanced flavor with zero burnt bitterness.

Our air-roasting process reduces acidity and eliminates that harsh, burnt bitterness found in most coffees. That means no gut-bomb effect, no acid reflux, and no regret after your second cup. Even customers who’ve sworn off coffee come back for Ember.

Crazy fresh. We roast in small batches right here in Minnesota and ship quickly—so your beans haven’t been sitting on a shelf for months losing flavor. You’ll taste the difference the moment you open the bag. Plus we stamp our bags with the roast date, not the "best buy" date. Note: Most coffees actually improve in taste in the two weeks following its roast date. If you receive a bag that was roasted 7-10 days from your date of order, we've likely held it to allow for off-gassing and maximum flavor.

We believe great coffee starts at the source. That’s why we build direct trade relationships with farmers who care as much as we do. Better pay for them, better beans for you, and a whole lot more integrity in your cup.

Yes, yes, and yes. Whether you’re team drip, AeroPress, Chemex, or full-on espresso, Ember’s roasts are engineered to perform across all brew methods without losing flavor, depth, or smoothness.

Because once you taste coffee that’s roasted right, sourced right, and doesn’t wreck your stomach… it’s game over for the grocery store brands and chain coffee shops. Ember becomes the new standard.

Our commitment to transparent pricing

Science-Backed Ingredients

We only use Arabica beans that score 80 or above on the Specialty Coffee Association scale—their standard for exceptional flavor and cleanliness. These tend to be grown at higher elevations and harvested by hand. In our experience, starting with a better bean matters more than anything else we do.
Every lot we roast meets SCA’s rigorous grading system, which evaluates 10 key attributes—like aroma, acidity, balance, and aftertaste. Each batch is cupped, scored, and traceable, ensuring not just quality, but integrity at every step. This isn't marketing fluff—it’s a globally respected benchmark for true specialty coffee. We source, roast, and brew with purpose—so you get a cup you can count on.
We test our coffees for mold before and after roasting. And while we cannot make a medical claim about what that means for you, but a lot of people who have had trouble with other coffees tell us they do fine with ours, and that it doesn't bother their stomachs (especially helpful for folks struggling with GERD).

Specialty-Grade Coffee, Delicious Taste

Jamaican Me Crazy medium roast flavored coffee, 12 oz bag, front of bag

We only roast the top 5% of beans in the world—carefully selected for clarity, character, and consistency. When you start with exceptional quality, you don't need shortcuts. Every cup begins with a promise: good beans, done right.

We partner with producers who prioritize fair wages, sustainable practices, and long-term relationships. From seed to sip, this coffee is as good for the growers as it is for you. Because doing it right means doing it together.

Air roasting unlocks the bean’s full aroma and complexity—think vibrant notes that actually reflect the origin. It’s a cleaner, more expressive cup that delights your senses from the first inhale to the last warm sip—so you actually taste the coffee's origin and not just the burntness of the roaster drum.

Most roasters use scorching-hot drums that can leave bitter, smoky notes. We air roast with precision and patience—preserving delicate flavors and skipping the scorch. The result? Coffee that’s smooth, never harsh, and always easy on your taste buds.

Air roasting reduces acidity and surface oils, making Ember coffee gentler on digestion. It’s a clean, smooth experience—even black—that doesn’t leave you with jitters or heartburn. Just calm energy and a ritual you can feel good about.

I use the Jamaican Me Crazy coffee beans for cold brew.

Jamaican Me Crazy

Store owner replied: Hello Teresa! We're so glad you're loving Jamaican Me Crazy as a cold brew, that sounds delicious. Thanks for the great review.

Smooth is the word. Vanilla bean up front, cocoa right behind, and a clean finish with no bitter bite. Great with breakfast, great with dessert.

Jamaican Me Crazy

Brews up smooth and smells amazing. Vanilla and cocoa, low acidity, full-ish body. Tastes indulgent but not heavy. Glad I grabbed two bags.

Jamaican Me Crazy

Very good flavor!

Jamaican Me Crazy

Store owner replied: Hi Nancy! We're so glad you're enjoying our Jamaican Me Crazy coffee, thanks for the great review.

The no alcohol part sold me, the flavor kept me. Vanilla bean and cocoa, warm and smooth, like a rum cake without the rum. Delicious.

Jamaican Me Crazy

Smooth and indulgent, just like the key note says. Vanilla bean leads, cocoa follows, and the whole thing is warm without being too heavy.

Jamaican Me Crazy

My coworkers keep asking what I'm brewing. Vanilla bean and cocoa on a smooth Brazilian base. The whole office likes it. That never happens.

Jamaican Me Crazy

Medium roast keeps it smooth, and the vanilla-cocoa combo is warm and comforting. Tastes like there should be a mug cake nearby. Good stuff.

Jamaican Me Crazy

Tastes like the coffee version of a warm vanilla cookie with a slight cocoa twist. Smooth, comforting, easy to drink. Ordered two more bags.

Jamaican Me Crazy

Good for what it is: a fun flavored coffee that doesn't bury the bean. Vanilla bean, light cocoa, smooth medium roast. My Saturday morning treat.

Jamaican Me Crazy

This was my first flavored coffee in years and it reset the bar. Delicate vanilla, subtle cocoa, real coffee flavor underneath. Very pleasant surprise.

Jamaican Me Crazy

Got it for my partner who loves sweet coffee. Now I'm stealing it. Vanilla bean and cocoa, smooth medium roast, no fake aftertaste. Big winner.

Jamaican Me Crazy

Not too sweet, which I love. The vanilla is delicate and the cocoa is subtle. Just a smooth, indulgent cup that goes down easy. Will buy again.

Jamaican Me Crazy

This is the coffee I bring to my in-laws. Everyone likes it. Vanilla and cocoa, smooth and indulgent. Can't go wrong with this bag.

Jamaican Me Crazy

I drank this with a little milk and it tasted like melted vanilla ice cream with cocoa powder. Dessert coffee, but actually good. Will reorder.

Jamaican Me Crazy

Tastes like vanilla pudding and cocoa had a baby, but still coffee. It's fun, it's easy, and it doesn't taste artificial. Great with a splash of cream.

Jamaican Me Crazy

The vanilla bean note is delicate like promised, not a smack in the face. Cocoa adds a little chocolate warmth. Smooth from sip to sip.

Jamaican Me Crazy

It's not trying to be serious and that's the point. Vanilla, cocoa, smooth and sweet. Perfect for those mornings that don't need to be serious indeed.

Jamaican Me Crazy

I've had Jamaican Me Crazy from other roasters and this is the best version. Actual vanilla bean flavor, subtle cocoa, real coffee base. Impressed.

Jamaican Me Crazy

I usually think flavored coffee is gross syrup territory, but this one's different. The vanilla is delicate, the cocoa is there, and the coffee still tastes like coffee.

Jamaican Me Crazy

This bag made me a flavored coffee believer. The vanilla is real, the cocoa is subtle, and the base is actually good Brazilian coffee. Well done.

Jamaican Me Crazy

Ordered for the wife, ended up ordering again for me. Vanilla bean and cocoa, dessert-like, smooth, no fake chemical taste. Our shared morning coffee now.

Jamaican Me Crazy

Honestly bought it for the name, stayed for the flavor. Vanilla and subtle cocoa, like a liquid dessert. Air roast keeps it smooth, no bitterness.

Jamaican Me Crazy

Works hot or iced. Iced with a little cream it's like a vanilla cocoa coffee treat. Hot it's warm and cozy. Versatile and tasty.

Jamaican Me Crazy

The flavorings complement the coffee instead of covering it, which is rare. You get Brazilian chocolate notes plus vanilla and cocoa on top. Really nice.

Jamaican Me Crazy

I got notes of vanilla bean and a light cocoa finish. Medium roast is smooth and not bitter. Honestly better than I expected for a flavored blend.

Jamaican Me Crazy

Coffee that tastes like a hug. Vanilla bean and subtle cocoa, low acid so it's gentle on the stomach. This is a comfort cup, no doubt.

Jamaican Me Crazy

I don't usually do flavored coffee but this won me over. Real vanilla bean note, whisper of cocoa, and it still tastes like actual coffee. Nice job.

Jamaican Me Crazy

Tastes like a tropical vacation that doesn't require sunscreen or a hangover. Vanilla bean and cocoa, smooth and indulgent. The name is fitting.

Jamaican Me Crazy

The description said dessert without being heavy and that's exactly right. Vanilla and cocoa, smooth finish, no cloying sweetness. Really enjoyable.

Jamaican Me Crazy

Not too sweet, not fake tasting, just smooth vanilla and subtle cocoa. I like that the coffee still tastes like coffee. Easy drinker.

Jamaican Me Crazy

This one's a crowd pleaser. Served it at a brunch and three people asked where to buy it. Vanilla and cocoa, smooth and indulgent. Nailed the name.

Jamaican Me Crazy

I grind it fresh and the house smells like vanilla cupcakes. The cup is more subtle: vanilla, cocoa, coffee. Sweet without being sugary. Very nice.

Jamaican Me Crazy

Smells like vanilla bean and tastes like dessert without being too sweet. The cocoa note is subtle and real smooth. My new easy drinking morning coffee.

Jamaican Me Crazy

The craft flavor supplier was a good call. You can tell the vanilla and cocoa are built to match the bean, not drown it. Tasty and balanced.

Jamaican Me Crazy

This is my dessert coffee now. Vanilla bean, subtle cocoa, smooth and warm. I drink it after dinner instead of actual dessert sometimes.

Jamaican Me Crazy

Cozy Sunday coffee. Vanilla and cocoa, smooth and low acid, goes down easy with a book and a blanket. Dessert in a mug without the guilt.

Jamaican Me Crazy

My tween daughter now asks for the yummy coffee every morning. Vanilla and cocoa on a smooth base. It's a family favorite now. Can't argue.

Jamaican Me Crazy

Vanilla bean, subtle cocoa, and a body that actually feels full. It's dessert-like but stays drinkable cup after cup. The hype is real.

Jamaican Me Crazy

Not a serious cup and I love it for that. Vanilla and cocoa on a smooth Brazilian base. Tastes like a treat, no alcohol needed. Cute name too.
