About the Producer

Between May and August, when winter sun breaks across Minas Gerais, the patios come alive with the ritual of the harvest. Here, at the foot of the Serra Negra—the black mountain that watches over these lands between 750 and 1100 meters—producers spread their coffee cherries in careful rows, turning them under the Brazilian sky for twenty to twenty-five patient days. This natural process, refined through generations, coaxes forth the mild almond sweetness that has defined this region since coffee first arrived centuries ago. These aren't the experimental lots that chase points and prices. This is the steady heartbeat of Brazilian coffee—the reliable craft of producers who understand that consistency itself is an art form. In contrast, we use superheated air for heat transfer—a method used by less than 1% of roasters worldwide. It delivers smoother, more balanced flavor with zero burnt bitterness.
