Each morning from September through April, across the highlands between 1300 and 2200 meters, over 1,900 smallholder farmers of ASPROGUATE begin their harvest rituals. Among them, 55% are women, and 90% belong to the indigenous Kaqchikel and Tz'utujil communities who have cultivated these slopes for generations. After picking ripe cherries from their Bourbon, Caturra, and Maragogype plants, they gather at the wet mills where coffee ferments for 12 to 48 hours—timing perfected through monthly workshops held in their San Martín Jilotepeque office. This isn't just coffee processing; it's community building. While beans wash clean of their mucilage, producers share techniques for organic fertilizers and erosion control, some planning side businesses in textiles and crafts.
