The fermentation varies with the mountain's moods, sometimes twelve hours, sometimes forty-eight, each decision guided by temperature, humidity, and generations of inherited wisdom. This isn't industrial efficiency; it's artisanal precision. After fermentation, the washing must be perfect—too little leaves residue that muddles, too much strips away sweetness. Then comes the patient drying on patios under Guatemala's intense highland sun, beans turned hourly to prevent uneven moisture.
