2021
A local project becomes Ember.
In 2021, Matthew and Elisa turned their shared passion for coffee into Ember. They opened the Big Lake coffeeshop and roastery and ran their first full production batch.
They wanted a shop where people knew each other's names. Coffee gave them a reason to build it.

Matthew and Elisa turn their shared passion for coffee into Ember. The Big Lake coffeeshop and roastery opens, and the first full production run begins.
2023
Ember earns its first Star Tribune Minnesota's Best Gold recognition, bringing statewide attention to the family-run Big Lake roastery.
2024 · 2025
Minnesota's Best Gold recognition continues in 2024 and 2025. Ember keeps buying seasonal coffee from traceable growers and roasting every batch with superheated air.

Four consecutive Minnesota's Best Gold honors later, Ember remains family-run, women-led, and rooted in the craft and community of Big Lake.
