THE PROBLEM WITH MOST COFFEE
Traditional drum roasters burn the outside while under-roasting the inside.
When beans tumble against searing hot metal, the surface chars before the core has time to develop. The result is that familiar bitter, ashy aftertaste — not a sign of a "bold" roast, but of imprecision.
Most roasters accept this as the cost of doing business. Ember never did.

The Machine
Our custom-built Sivetz fluid bed roaster has been modified over four decades by Luciano Repetto to achieve exact temperature parameters that no off-the-shelf machine can replicate.
-
02
The Method
Heated air suspends every bean in a constant flow, roasting each one evenly inside and out. No hot spots. No scorching. Just precise, consistent heat applied with surgical control.

The Result
A cup that is smooth, rich, and full-bodied — never bitter. The natural flavors of our Colombian, Costa Rican, and Papua New Guinean beans emerge without interference.
