Pecans get better when you toast them. The sugars darken, the nut turns buttery, and what was pleasant raw becomes something you keep going back to. That's the flavor we were after here.

Buttery toasted pecan leads, praline sweetness follows, and caramel rounds off the finish. The base is Brazilian, grown in the highlands of Minas Gerais and air roasted to a smooth medium, which gives the nut something to sit against instead of floating on top of a thin cup.

Our flavorings come from a craft supplier who builds profiles to complement the bean instead of burying it.

About the Producer

Producers at the foot of Serra Negra in Minas Gerais grow this coffee between 750 and 1100 meters. Harvest is May through August, with cherries spread on patios and turned by hand over twenty to twenty-five days of natural drying. The region's combination of warm days and cool highland nights slows cherry maturation and concentrates sugars. Red-clay laterite soil, threaded with mineral deposits, adds an earthy quality that anchors the cup's sweetness.

Many of these families have worked the same hillsides for generations, passing down knowledge of microclimates and drying conditions. The result is coffee that's low in acidity, full-bodied, with chocolate and nutty warmth. Not a competition lot, just honest, well-made Brazilian coffee. Soft, approachable, and consistent year after year.

How long (and at what temperature) the beans stay in the roaster. This affects everything— how sweet, how bold, how bright your cup tastes. Here's the thing though: "light," "medium," and "dark" mean something different at every roastery. There's no universal standard. So when we say medium roast, we're speaking our own language. Think of our scale as a guide to our approach—smooth, balanced, never burnt.

Acidity

Not sour. Not harsh. Think brightness—like the difference between a ripe peach and a green one. Lower acidity means the coffee leans sweeter, softer. Higher acidity brings more vibrancy, more of that crisp, lively quality. Our air-roasted beans tend to land on the gentler side. That's intentional. We want your morning to feel like a deep breath, not a jolt.

INTENSITY

Intensity

This is about how the coffee lands. The weight of it on your tongue. How concentrated the flavors feel. A lower intensity is lighter, more delicate—easy to drink without thinking. Higher intensity means bold, full, the kind of cup that announces itself. Neither is better. It's just about what you're craving and what your morning needs from you.

Mellow Bold

Toasted pecan comes through first, buttery and warm, closer to a pecan pulled off a hot pan than one out of the bag. Praline follows and brings the sweetness up, that soft candied edge you get from brown sugar and butter cooked together. Caramel closes it out. The finish is rich and stays on the tongue a while.

The Brazilian base does real work here. It's full-bodied and low in acidity with its own chocolate and nutty warmth, so the pecan has somewhere to land. A brighter coffee would push against the flavor and make the whole cup taste artificial.

We air-roast to a smooth medium, far enough for sweetness and short of any char. Drip is the easy answer, and it takes cream well if that's how you drink it. Cold brew turns it into something close to a pecan praline over ice.

It’s all in the roast. While most coffee is drum-roasted, which means the beans are scorched as they come in contact with the hot sides of the metal drum. In contrast, we use superheated air for heat transfer—a method used by less than 1% of roasters worldwide. It delivers smoother, more balanced flavor with zero burnt bitterness.

If you receive a bag that was roasted 7-10 days from your date of order, we've likely held it to allow for off-gassing and maximum flavor.
