A medium roast blend with chocolate and buttery caramel. The chocolate is deep and grounding, and the caramel rounds out the edges for a smooth, balanced cup. Named for what Minnesota does best.

Sourced from Central and South American beans. This is an easy-drinking, everyday coffee with enough depth to stay interesting. No bitterness, just a clean, full-bodied finish. Good for drip, French press, or pour-over.

Start with a 1:16 ratio, 1 gram of coffee to 16 grams of water. That's the sweet spot for balanced flavor and body. Pour-over and drip stay close to 1:16. Go 1:15 for more richness, or 1:17 for a lighter cup.

French press does well a little stronger at 1:14 to 1:15. AeroPress can go tighter too, around 1:12 to 1:15. Use filtered water, grind fresh, and drink it right after brewing.

Air roasting uses clean, hot air to roast each bean evenly. You get a smoother, cleaner flavor without the bitterness or burnt taste that comes from traditional drum roasting. No hot metal contact means no smoky aftertaste.

It's a gentler process that brings out what's actually in the bean. The origin flavors and nuanced notes that heavy roasting covers up.

About the Producer

This blend pairs Peruvian and Guatemalan coffees, both grown at elevation in volcanic soil. The Peruvian side comes from smallholders on Andean terraces, hand-picking heirloom varieties under shade canopy. Guatemala's contribution grows on the slopes of active volcanoes, tended by Indigenous cooperatives with deep generational knowledge of the land.

Both origins use shade-grown cultivation and raised-bed drying. The combination works because they share a similar growing philosophy (high altitude, low intervention, hand processing) while bringing complementary flavor profiles to the cup. Peru adds brightness and clean sweetness; Guatemala adds body and chocolate depth.

10,000 Lakes is our Minnesota tribute in a mug. It's a great French press coffee where the full body and caramel sweetness really come through, but it holds up in drip and pour-over too. No bitterness, no sharp edges, just a clean, comforting cup that works any time of day.

It’s all in the roast. While most coffee is drum-roasted, which means the beans are scorched as they come in contact with the hot sides of the metal drum. In contrast, we use superheated air for heat transfer—a method used by less than 1% of roasters worldwide. It delivers smoother, more balanced flavor with zero burnt bitterness.

Our air-roasting process reduces acidity and eliminates that harsh, burnt bitterness found in most coffees. That means no gut-bomb effect, no acid reflux, and no regret after your second cup. Even customers who’ve sworn off coffee come back for Ember.

We only use Arabica beans that score 80 or above on the Specialty Coffee Association scale—their standard for exceptional flavor and cleanliness. These tend to be grown at higher elevations and harvested by hand. In our experience, starting with a better bean matters more than anything else we do.

Great coffee. Unfortunately, my coffee maker (keurig) makes a minimum of 6 cups of coffee when in the caraffe mode. since i only drink 1 (maybe 2) cups of coffee a day I end up wasting 3-4 cups of coffee. So, i am in the process of finding reusable k-cups for my keurig. Hopefully i will be able to make one cup at a time. i really do enjoy your coffee and plan on ordering from you in the near future. danny

I did not like the flavor of 10,000 Lakes. I am not sure if I will like the Brazil - the label says it is dark roast but I like medium roast. I thought I was ordering the same one as my sample. I REALLY liked the sample - it was flavorful and smooth. I left a message for someone to call me so I could exchange this Brazil if it is the wrong flavor but I have not heard back yet. Please call me at 651-274-1885 to at least let me know if I have the same flavor as the sample you sent.
