A Special Thank You From Ember Coffee—And a Few Brewing Tips!

Hey there, friend! If you're reading this, chances are you’ve recently received a little thank-you card from us in your Ember Coffee order. That means you’ve chosen to support a small, family-owned business in Minnesota—and for that, we’re incredibly grateful.

We’re Matt and Elisa Berry, the founders of Ember Coffee, and along with our amazing team (including our kids, who help pack orders!), we want to personally thank you for choosing Ember. Every purchase you make helps us continue doing what we love—roasting exceptional coffee while making a real impact in the world.

Now, let’s talk about making your coffee taste as amazing as possible with the right brewing ratio and a few pro tips to bring out the best in every cup.

Brewing Basics: The Right Coffee-to-Water Ratio

The secret to a great cup of coffee? Extraction and balance.

When you brew coffee, you’re extracting oils, aromas, and flavors from the beans and infusing them into water. The right ratio of coffee to water is key to getting that rich, smooth, and well-balanced taste.

The Golden Ratio: 1:16

We recommend starting with a 1:16 coffee-to-water ratio for the best flavor. Here’s how to do it:

Weigh Your Water: First, figure out how much liquid you want to brew. If you’re using a coffee maker, pour water into your carafe, place it on a scale, and weigh it in grams or ounces.

Divide by 16: Take the weight of your water and divide it by 16. That number tells you exactly how many grams or ounces of coffee to use.

Grind & Brew: Adjust your grind size based on your brewing method (finer for espresso, coarser for French press), and you’re ready to brew a balanced and flavorful cup!

Fine-Tuning Your Brew

Even with the right ratio, small tweaks can make a big difference. Here’s how to adjust your brew if it’s not quite hitting the mark:

  • Too strong or bitter? Try coarsening your grind or using slightly less coffee.
  • Too weak or sour? Your coffee may be under-extracted. Try grinding finer or adding a little more coffee to the brew basket.
  • Espresso settings are different. If you’re making espresso, never grind as coarse as drip coffee—but don’t go too fine, or you’ll over-extract and get bitterness.

Brewing great coffee is part science, part art, and we’re here to help you dial it in to perfection!
