In the sun-drenched hills of Comayagua, Honduras, La Esmeralda De La Finca is cultivated by dedicated smallholders committed to organic practices and intentional fermentation. This microlot undergoes a 72-hour anaerobic natural process—carefully controlled to enhance clarity and preserve sweetness—before being dried in the warm mountain air at 1,750 metres above sea level.
The result is a layered and expressive profile, balancing round caramel and cocoa depth with bright accents of dried citrus and toasted almond. The roast is developed to a medium-light level, preserving origin character while promoting balance, gentle acidity, and a clean finish.
Approachable yet nuanced, this single origin Honduras offering brings out the best of careful fermentation and high-elevation terroir. It is a cup of harmony—structured, sweet, and naturally vibrant.
