With decaf getting better every year, we wanted one worth drinking on its own terms. This is a Colombian lot decaffeinated using the sugarcane process, where ethyl acetate derived from fermented sugarcane lifts the caffeine out gently. It keeps more of the origin's sweetness than water processing tends to, which is why the cup still tastes like coffee rather than a compromise. Works well for espresso, drip, and cold brew.

Use the Strong setting on your Keurig and brew at 6 to 8 oz. A smaller cup size pulls more flavor and body from the pod.

Filtered water makes a noticeable difference. Run a water-only cycle first to clear the machine, then brew and enjoy while it's hot.

Air roasting uses clean, hot air to roast each bean evenly. You get a smoother, cleaner flavor without the bitterness or burnt taste that comes from traditional drum roasting. No hot metal contact means no smoky aftertaste.

It's a gentler process that brings out what's actually in the bean. The origin flavors and nuanced notes that heavy roasting covers up.

About the Producer

In 1934, Gerardo Escobar Mesa and Enriqueta Ceballos moved from Jardin, Antioquia to the Western Cordillera in Belen de Umbria, Risaralda. Starting with a small plot at 1500 meters, Gerardo consolidated neighboring farms over time. Four generations later, the family still works these same slopes, where average temperatures hold at 19 degrees Celsius and annual rainfall hits 2,263 millimeters. That consistency is ideal for their Tabi varietal.

The volcanic soil and Risaralda's microclimate produce a fruit-forward cup with real complexity. This is a family that has been refining the same land for nearly ninety years, and the coffee reflects that level of knowledge and commitment. Eighty-plus years on the same hillsides, same focus on quality, same refusal to cut corners.

Intensity

This is about how the coffee lands. The weight of it on your tongue. How concentrated the flavors feel. A lower intensity is lighter, more delicate—easy to drink without thinking. Higher intensity means bold, full, the kind of cup that announces itself. Neither is better. It's just about what you're craving and what your morning needs from you.
Mellow Bold

Graham cracker, molasses, and honeycomb. That's what you're tasting here, in that order. The graham cracker gives it a warm, toasty base. Molasses adds dark sweetness and body. And the honeycomb brings a brighter, almost floral sweetness that ties the cup together. It's layered, interesting, and happens to be decaf.

We roasted this one to stand on its own, not as a consolation prize for skipping caffeine. It's your evening cup, your third cup, your "I just want coffee right now" cup. Brews well in any method, but it's especially good as a slow pour-over after dinner.

It’s all in the roast. While most coffee is drum-roasted, which means the beans are scorched as they come in contact with the hot sides of the metal drum. In contrast, we use superheated air for heat transfer—a method used by less than 1% of roasters worldwide. It delivers smoother, more balanced flavor with zero burnt bitterness.

We only use Arabica beans that score 80 or above on the Specialty Coffee Association scale—their standard for exceptional flavor and cleanliness. These tend to be grown at higher elevations and harvested by hand. In our experience, starting with a better bean matters more than anything else we do.
Every lot we roast meets SCA’s rigorous grading system, which evaluates 10 key attributes—like aroma, acidity, balance, and aftertaste.
